Chef Jacques Pepin Makes Grilled Lamb Burgers with Tzatziki Sauce for Fourth of July

For the Fourth of July, Chef Jacques Pepin suggests that you change up your burger menu a bit by grilling lamb burgers stuffed with feta, served with red wine. Chef Pepin prepares the burgers for WSJ's Barbara Chai.
Chef Pepin takes fresh ground lamb, which he says is very lean, and adds a number of ingredients to make the burgers more juicy. He adds mushrooms, onions, Mexican oregano, garlic and cumin. He says jalepeno peppers or tabasco would also work well. He makes a hole in the meat patty and stuffs it with feta cheese. For the buns, he slices a French baguette lengthwise, and places it on the grill.
He then makes a Greek Tzatziki sauce by mixing thick Greek yoghurt, mint, lemon zest, lemon juice and grated cucumber. He serves the sauce on the side of the burgers, with the grilled baguettes. It looks delicious.
